Into the kitchen, ready, set, go: Marinated salmon
Today our friends from FOODBOOM will be showing you the best way to fillet a whole salmon. You can remove any fish bones that are sticking out quickly and easily using our fishbone tweezers. Marinated salmon is a recipe that needs some patience: but it is well worth it!
Ingredients for one side of salmon (approx. 1.2 kg):
Approx. 1.2 kg salmon fillet
½ bunch of dill
6 sprigs of coriander
4 juniper berries
1 organic orange
1 organic lime
75 g salt
30 g sugar
- 1. Wash the fish and dab it dry. Wash the dill and coriander, shake them dry and pick off the leaves and finely chop them. Crush the peppercorns and juniper berries. Wash the orange and lime in warm water, dry them with a cloth and finely grate the rind. Mix together the salt, sugar, herbs, pepper, juniper and zest.
- 2. Roll the cling film out onto the work surface. Place the fish on top and distribute the marinade evenly over the surface. Wrap the fish up well in the cling film. Place a wooden board on top of the fish and weigh it down with a weight (e.g. cans of food). Leave the fish to marinate for 2-3 days. Pat the marinated fish dry using kitchen paper. Cut it in thin slices at an angle away from the skin
