Into the kitchen, ready, set, go: Lemon vanilla yoghurt with strawberries and mint

The sun is shining and it’s really hot outside. Summer has arrived! When the weather is so wonderfully warm, keep your cooking fresh and cold! This lemon vanilla yoghurt from our friends at FOODBOOM is ideal for hot summer days: light, fruity and fresh, healthy and delicious!

Lemon vanilla yoghurt with strawberries and mint:

Serves 4:
½ vanilla pod
1 organic lemon
300 g strawberries
2 tbs honey
600 g whole milk yoghurt (1.5% fat)
2 sprigs of mint
50 g granola muesli

Utensils: Board, knife, whisk

Method:

  1. 1. Cut the vanilla pod in half lengthways and scrape out the pulp. Wash the lemon, dry it with a cloth and grate the rind. Wash the berries, pat them dry and chop as required. Mix together the vanilla pulp, yoghurt, lemon peel and honey. Add the berries to the mix.
  2. 2. Wash the mint, shake it dry and pick off the leaves. Serve the yoghurt in a bowl. Scatter the granola on top and garnish with the mint leaves.

Prep. time: approx. 10 minutes

Tip: The yoghurt can easily be prepared in advance for the following morning.
