Christmas Goose with Orange Stuffing

Ingredients for 4 – 6 persons:
1 oven-ready goose (approx. 4kg)
3 oranges
2 onions
2 stalks mugwort
2 stalks rosemary

Utensils: kitchen twine, cutting board, knife, wooden skewers, oven rack and drip pan


  1. 1. Wash the goose both inside and out and pat dry. Season the cavity with salt and pepper. Rinse and dice the oranges. Peel and dice the onions. Rinse and shake dry the herbs and remove the stems. Fill the goose with the oranges, onions and herbs. Then sew the wooden skewers through the edges of the cavity and lace the kitchen twine through the skewers to pull the cavity closed. Tie the legs and wings together and season the goose with salt and pepper.
  2. 2. Preheat the oven (electric stove: 175°C / fan:150°C). Set the goose in a roasting tin with the breast facing upwards. Put it in the preheated oven to roast for about 2 hours. Baste the goose periodically. Finally, remove the goose from the oven and carve.

Preparation Time: approx. 30 minutes
Cooking Time: approx. 2 hours

Tip: We recommend serving goose with red cabbage and dumplings.
